     Sweet Potato Casserole

Ingredients
2 1/3 pounds sweet potatoes, scrubbed, forked, baked 450 degrees 45-60 mins
2 eggs
4 Tbs butter
1/2 cup dark brown sugar
1 tsp salt
1/2 tsp cinnamon
1/2 tsp ginger
1/8 tsp nutmeg
Black pepper, 2 dashes
 
1 tsp cinnamon
3/4 cup sugar
3/4 cup flour
1/3 cup butter, cold
1/2 cup chopped pecans

Instructions
Scoop potatoes out of skins and mash. Add eggs, butter, brown sugar, salt, cinnamon, ginger, nutmeg and black pepper. Mix well and pour into buttered 8x8 casserole
mix 1 tsp cinnamon, sugar and flour. Cut in cold butter till mixture looks crumbly. Mix in pecans and sprinkle evenly over potato mixture. Bake in 350 degree oven 45 minutes.
Serving Suggestions
Double the crumb topping if you are prone to excess.
