first make the sauce..
put butter, flour and milk into saucepan and place over moderate heat. using ballon whisk, keep whisking until the mixture comes to the boil and thickens to a smooth sauce. turn the heat down as low as you can and leave to simmer very gently for 5-6 mins to cook the flour. stir in two thirds of the cheese, the mustard, and tabasco, salt, pepper and nutmeg to taste.

cook macaroni and drain. Then mix the macaroni with the cheese sauce. add more salt and pepper to taste. Can eat at this point or can bake with topping as follows - spoon the mix into a heatproof dish and sprinkle with the breadcrumbs, the remaining cheese and a few flakes of butter. bake in the oven for about 20 mins, until top is brown and crisp.
