wash and sort beans. add water, 3 inches above beans. cook in crock pot
6 hours.
drain beans. wash chicken and add to beans. cover with water, 3 inches
above mixture. cook 6 hours.
drain beans and chicken. shred chicken. mix beans and chicken with 1
can enchilada sauce.
wrap mixture in tortillas. line up tortillas, seam side down, in
greased baking pan. cover with remaining can of enchilada sauce. bake
at 400 degrees for 15 minutes. top with pepper jack cheese, bake an
additional 10 minutes.
