1/2 cup brown sugar (1/4 cup for muffin batter and 1/4 cup on top of muffins)
1 large egg
1 cup plain yogurt or buttermilk (or soy milk or plain milk and 2 teaspoons lemon juice)
2 cups peeled apple, coarsely chopped
1/2 cup chopped walnuts (optional)
Instructions
Mix sugars (1/2 cup white sugar and 1/4 cup brown sugar), egg, and butter and beat until creamy. Add buttermilk or yogurt (or milk/soy plus lemon juice), mix gently, then add the dry ingredients and stir well. Fold in the chopped apples.
Divide the batter into 18 lined muffin tins. Sprinkle brown sugar and nuts on top of each muffin. Bake at 400 degrees for 20 minutes, until toothpick inserted comes out clean. Cool 10 minutes then remove from muffin pan to cool completely.
For parve muffins use parve margarine or vegetable oil and soy milk.
