      Cranberry Sauce

Ingredients
1 package (12 ozs) fresh cranberries
3/4 to 1 cup sugar (1 cup is too sweet if using OJ)
1 cup orange juice or water (I prefer OJ) or
1 cup fresh squeezed OJ using the pulp (1 - 2 oranges)
1 T zest
1 cinnamon stick, or 1/2 - 1 t ground cinnamon (optional)
 

Instructions
Place all ingredients in small sauce pan. Bring to boil and turn down heat to simmer for about 10 minutes or until you have the consistency in the berries you want. Take off eye and allow to cool. Remove the cinnamon stick and throw in garbage. Stir sauce and place in refrigerator. If sauce is not tart enough for you squeeze a little fresh lemon juice in finished sauce.
This is best made the night before so that is can sit. Morning of is fine as well, but needs as much time as possible in fridge to settle before serving
