     Asian Pasta with Vegetables

1 lb Whole Grain Thin Spaghetti
1 Red Bell Pepper, julienned pieces
1 lg head of Broccoli, cut into bite size pieces
1/2 cup toasted, slivered Almonds
1/4 cup toasted Sesame Seeds
1 bunch of Scallions or Green Onion, sliced
1/2 cup Soy Sauce
2 T Sesame Oil
2 T Canola OIl
2 T Rice Wine Vinegar
1 cup shredded Chicken
OPTIONAL VEGETABLE CHOICES- Snow Peas, Carrots, Asparagus, Cilantro, Water Chestnuts

Cook pasta, drain. Lightly toss in extra Sesame Oil.
Make dressing. Mix oils, vinegar, soy sauce and handful of sliced scallions. Whisk together to blend. Pour some of dressing over pasta and chicken to coat. Add vegetables, 1-2 T sesame seeds, handful of green onions (leave just enough for garnish). Toss together to blend flavors. Add almonds right before serving. Garnish with remaining green onions and sesame seeds.
Serving Suggestions
Try THAI style- Carrots, cilantro, water chestnuts (& green onions). Subsitute peanuts for almonds. Add 1 T peanut butter to dressing.
