     Apple Stuffed Pork Chops

Ingredients
olive oil
1/2 onion, diced
1 apple, chopped (1 large or 2 small)
2 tbsp balsalmic vinegar
1/2 c dried cranberries
salt and pepper to taste
2 boneless pork chops, 1 1/2 inch thick
 

Instructions
Heat olive oil in skillet over medium meat. Stir in onion and apple, cook and stir for 5 minutes. Stir in cranberries and balsalmic vinegar and continue cooking until the apple and onions have softened, about 5 minutes. Transfer to plate and cool.
Preheat oven to 350, lightly grease a small baking dish.
Cut a large pocket into the pork chops. Stuffed the cool apple mixture into the pork chops, secure with toothpicks if needed. Heat olive in skillet over med-high. Season the pork chops with salt and pepper and place in hot skillet. Cook for 3 mins on each side. Transfer to a baking dish and pour remaining apple mixture over chops.
Cover with foil and bake in preheated oven at 350 for approx 40 minutes. Uncover and cook about 10 minutes longer untile the apple mixture has browned around the edges.
