Blackberry Cobbler

Ingredients
-
Berry Mixture:
-
6 c. frozen or fresh blackberries (need at least 1 1/2 c juice-add water to berry juice if needed)
-
2 1/4 cup sugar
-
6 T. tapioca
-
Crust:
-
1 1/2 cup GF flour mix (I use Really Great Foods All-Purpose Flour)
-
3 tsp. baking powder
-
1/2 tsp. salt
 
-
3 T. Crisco
-
3/4 cup sugar
-
3 eggs
-
3/4 cup milk
-
1/4 tsp. vanilla

Instructions
Combine berry mixture and bring to boil on top of stove using a metal oven proof pan.
Sift together 3 crust ingredients. Cream sugar and shortening. Beat in eggs. Add alternately with milk to sifted ingredients. Do not overbeat. Stir in vanilla. Drop crust mixture by tablespoons over boiling fruit.
Bake at 350 for 30 minutres. The crust will spread over fruit.
Serving Suggestions
Serve with vanilla ice cream or whipped cream. Makes 12-14 servings.
