Prepare cookie mix according to package directions. Roll the dough into 1 inch balls. Place in greased miniature muffin cups. Press dough evenly into bottom and up sides of each cup. I use handle of ice cream scoop. Bake cookies at 350º for 11-minutes. Immediately place a peanut butter cup in the center of each cup; press down gently. Put back in oven for 3 minutes. Cool for 10 minutes; carefuly remove from pan.
