     Pumpkin Roll

Ingredients
3 eggs
1 cup sugar
2/3 cup pumpkin
1 tsp lemon juice
3/4 c plain flour
1 tsp baking powder
1 tsp ginger
1/2 tsp salt
2 tsp cinnamon
 
1/4 cup chopped nuts, optional
1/4 cup powdered sugar
Filling-
8 oz cream cheese, room temperature
1 tsp vanilla
2 T. margarine
1 1/2 - 2 cups powdered sugar

Instructions
Beat eggs 5 minutes; add sugar. Slowly add pumpkin. While beating add remaining ingredients except powdered sugar. Pour onto greased cookie sheet (15 x 10 x 1/2). Sprinkle with nuts if desired. Bake at 375 for 15 minutes; turn out on paper towels. Sprinkle with powdered sugar;roll up very,very slowly while warm and let cool.
Microwave cream cheese and margarine for a seconds. Mix remaining filling ingredients. Unroll cake and spread filling. Roll up again and put on plate. Cover and refrigerate until ready to serve.
Slice and serve.
