1 lb. brie cheese, rind removed and torn into pieces
1 cup cleaned, fresh basil leaves cut into strips
3 garlic cloves, peeled and minced
1 cup plus 1 Tbsp. olive oil
2 1/2 tsp. salt
1/2 tsp. pepper
1 1/2 lbs. bowtie pasta
grated parmesan cheese
Instructions
Combine tomatoes, brie, basil, galic, 1 cup olive oil, 1/2 tsp. salt, and
pepper in a large serving bowl. Prepare at least 2 hours beforehand
covered and at room temperature.
Bring 6 qz. water to a boil and add 1 Tbsp. olive oil and remaining salt.
Add bowtie pasta, and boil 8-10 minutes.
Drain pasta, and immediatelty toss with tomato sauce. Serve at once,
passing around pepper shaker and parmesan cheese.
