Combine eggplant, onion green pepper, garlic and mushrooms in oil in
pan. Cover and
stir occassionally and cook for 20 - 25 minutes, or until soft. Add
remaining ingredients
and mix well. Simmer covered until eggplant is tender (about 1/2 hr).
Garnish dish with sliced stuffed olives. (I don't use). Freezes well.
