     Caponata

Ingredients
1 large eggplant, peeled
1 chopped onion
1 - 4 oz can sliced mushrooms
2 cloves crushed garlic
1/4 cup water
1/2 tsp oregano
1/8 tsp ground pepper
1 green pepper
1 - 6 oz can tomato paste
 
1 1/2 tsp sugar
1/3 cup salad oil
2 tbs wine vinegar
1 tsp salt

Instructions
Combine eggplant, onion green pepper, garlic and mushrooms in oil in pan. Cover and stir occassionally and cook for 20 - 25 minutes, or until soft. Add remaining ingredients and mix well. Simmer covered until eggplant is tender (about 1/2 hr).
Garnish dish with sliced stuffed olives. (I don't use). Freezes well.
