     Chinese Fortune Cookies

4 large eggwhites
1 teaspoon pure almond extract
1 teaspoon pure vanilla extract
6 tablespoons vegetable oil
1 cup all purpose flour
1 tablespoon cornstarch
1/2 teaspoon salt
1 cup granulated sugar
2 tablespoons water

Write 20 fortunes. Preheat oven to 300F. Cooking spray the cookie sheets. Beat egg whites, almond and vanilla extract and veg oil till frothy, but not stiff. Sift together dry ingredients in separate bowl. Stir water into flour mixture. Add flour mixture into egg mixture. Stir till smooth. Place 3/4 tablespoons of batter 3 inches apart on cookie sheet. Gently tilt baking sheet side to side to form batter into circles 3 inches in diameter. Bake for 13-15 minutes. DO NOT OVERBAKE Working quickly, remove cookie with spatula, place fortune inside and fold in half, then gently pull the edges forward over the rim of a glass or a wooden spoon. Cool on a wire rack.
