     Mexican Avocado Soup

1 tbsp olive oil
1 large onion, finely chopped
1 tbsp wheat flour
4 cups vegetable stock
2 large avocados, mashed
1 pinch cayenne pepper

Prep time is 10 min. Cook time is 20 min, not including the time it takes to puree. Recipe makes 5 (1 cup) servings.
Fry the onion in the oil. Sprinkle with the flour and stir-fry until the onion is well coated. Continue to stir, and slowly add the stock.
Bring to a boil, add the avocado and the cayenne pepper, and gently simmer for 5 min. Puree in blender.
NUTRITIONAL INFORMATION- 150 Calories per 1 cup serving (750 calories for total recipe)
