     ham and cheese puff pockets

Ingredients
whole wheat pastry flour for dusting work surface
2 vegan whole wheat pie crusts, room temp, 9in
4oz vegan cheddar cheese shredded
4 oz vegan sliced ham
 

Instructions
preheat oven to 400F. line baking sheet with parchment. on work surface lightly dusted with flour, combine both pie crusts and roll them into a 12in rectangle, cut in quarters to make 6in squares. top squares with half the cheese, dividing evenly, covering only half the pastry leaving 3/4in border. fold ham to cover cheese, place remaining cheese on top of ham.
fold pastry in half pressing edges together to seal in filling. crimp edges with fork. poke pocket a few time to create air vents. put pockets on baking sheer and bake for 20 minutes, or until nicely browned.
