     Pimento Cheese dip

Ingredients
one half lb cheddar cheese - grated
1 cup mayonnaise (I prefer Hellman’s up here- out West the same mayo is sold under the brand nam
2 ounces by weight roasted red peppers, diced (about one quarter cup)
three quarters teaspoon juice from the roasted peppers (if you’re using jarred roasted peppers)
one quarter teaspoon coarsely ground black pepper
Scant one quarter teaspoon cayenne pepper, or to taste
Pinch coarse sea salt
 

Instructions
Fold all the ingredients together in a mixing bowl. Mix well. Eat.
