     White Chicken Chili

Ingredients
1/2 onion, diced
3 cloves garlic, crushed
1 (4 ounce) can chopped green chile peppers
2 teaspoons ground cumin
1/2 or 3/4 teaspoon ground oregano
1/2 or 3/4 teaspoon ground cayenne pepper
1 (14.5 ounce) can chicken broth
3 cups chopped cooked chicken breast (I used 1 can cooked chick breast)
3 (15 ounce) cans white beans (not drained)
 
1 can white or shoepeg corn (drained)
1 cup shredded Monterey Jack cheese
Optional- 1 (4 ounce) can diced jalapeno peppers if you want it to be really spicy. I did not.

Instructions
The recipe said to heat a Tbsp of vegetable oil in a large saucepan over med-low heat and then slowly cook and stir the onion until tender. Mix in the garlic, green chile peppers, cumin, oregano and cayenne. Continue to cook and stir the mixture until tender, about 3 minutes. Mix in the chicken broth, chicken and white beans. Simmer 15 minutes, stirring occasionally. Remove from heat. Slowly stir in the cheese until melted. Serve warm.
I just put everything except the cheese into my crockpot on high for 4 hours and then stirred in the cheese prior to serving. That worked just fine too.
