1 lb. asparagus, trimmed and cut 3 in. pieces
|
|
1 1/2 c. reduced-fat sour cream
|
|
2 tsp. lemon juice
|
|
1 1/2 tsp. prepared mustard
|
|
1/2 tsp. salt
|
|
8 ounces sliced cooked chicken breast
|
|
4 english muffins, toasted
|
|
2 tomatoes sliced
|
|
|

|
|
|
|
|
|

|
|

|

Instructions |
|
|
Place asparagus in a cover saucepan and cover with water; bring to
a boil. Cover and cook for 2 minutes or until crisp. Drain and set
aside.

In the same pan, combine the sour cream, lemon juice, mustard,
and salt. cook on low until heated through.
|
|
|
Put chicken, asparagus, and sauce on the english muffins.
