     Lemon Shortbread Bars

Ingredients
Crust-
1/4 C Oat Flour
1/2 C Soy Milk Protein
pinch of sea salt
1/4 teas. Stevia Extract Powder
1/4 C. Butter
1/2 teas. Vanilla Flavoring
Topping-
 
3 eggs
Stevia to the equiv. of 2/3 C. Plus 3 1/2 Tablespoon Sugar (Different brands of stevia have differen
3/4 teas. Guar Gum
1/2 teas. grated Lemon Zest
1/4 C. Fresh Squeezed Lemon Juice
1/2 teas. Baking Powder

Instructions
Crust- Combine all dry ing. Cut in the butter. Add Extract. Mix with your hands. Press this in the bottom of a greased 8 inch sq baking pan. I baked mine at 325 for about 10-15 min. Just until it looks like it is beginning to set up. Let cool for a while before pouring on the lemon mixture.
Topping- Beat the eggs and then sprinkle the remaining ing. one at a time to the egg mixture. If you dump it all together it will get lumpy instead of creamy. Pour this on top of the partially cool crust and return to the over on 350 for about 15 min. Very good warm or out of the frig.
