Cream shortening, salt & sugar together. Seperate egg yolks add yolks to mixture. Add flour, milk & lemon mix well. Beat egg white to stiff peaks, fold into mixture. Pour mixture into pie pastry dough uncooked, bake at 450 for 5 min, reduce heat to 325 and continue baking for 35 to 40 minutes until custard thickens in center. Let cool 5 min, slice and serve.
