     Zucchini Bread

Servings   2 large loaves
Ingredients
2 cups sugar
1 cup oil
4 eggs (beaten)
1 teaspoon vanilla
3 1/2 cups flour
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon baking powder
1 1/2 teaspoons soda
 
2 cups ground zucchini
Instructions
Combine sugar, oil, eggs and vanilla. Beat well. Combine dry ingredients and add to wet ingredients. Add zucchini.
Pour in loaf pan and bake at 350 for 45 minutes.
