Mix egg yolks, sugar, lemon juice and rind
Cook over hot but not boiling water.

Stir constantly until thick as heavy cream
Remove from heat and cool
|
|
|
Mix into the cool custard, the egg whites which
have been beaten to form soft peaks and the beaten
heavy cream.
Do this gently, folding
|
|
|
Roll crisp graham crackers between wax paper
One half on bottom of ice cup tray- 1/2 on top
Fridge until firm in your refrigerator
