Beat egg whites with sugar until stiff peaks.

Add sifted almond meal and powdered sugar by thirds
folding into egg whites until smooth lava texture.

|
Pipe onto aluminum baking sheets with silpats then
bake for 12 minutes at 290F but watch closely
because they could be done sooner!

|
Melt the chocolate and incorporate the cream. Then
spoon between two cookies.
