     Lemon Roast Potatoes

Ingredients
4 lb potatoes
1 cup water
1/2 cup lemon juice
1/3 cup olive oil
3 cloves garlic minced
2 tsp salt
2 tsp oregano
1 tsp pepper
 

Instructions
Cut potatoes lengthwise into wedges. Place into 13' x 9' dish. Whisk water, oil, and lemon juice and remaining ingredients. Spread over potatoes.
Bake at 325F turning occasionally for 2 hours until most of liquid evaporates.
