     Stained glass fruit cake

Ingredients
1 cup plain flour
1 teaspoon baking powder
2 eggs
1/3 cup brown sugar
225g glace pineapple
55g glace pear
55g glace kiwi / green cherries
55g glace apple (if uavail. add more apricots & pears)
55g glace apricot
 
115g red cherries
115g sultanas
115g currants
115g halved blanched almonds
115g halved pecans
115g halved brazil nuts
1/4 cup Grand Marnier or Cointreau

Instructions
Preheat oven to 300F. Line a silicon round dish with 2 layers of baking paper.
In a large bowl mix well flour, baking powder, eggs and sugar. Buy all glace fruits and nuts measured from a nut shop. Hit nuts with rolling pin to break up. Add to flour mix and stir till all covered.
Put mix in prepared silicon round pan. Press mixture down firmly with hands and straight sided jar.
Bake in oven for 1.5 hours. Test with skewer and if it comes out clean it is ready. Remove from oven and drizzle Grand Marnier / Cointreau over the top. Leave cake out to cool, cover with tea towel. When cool wrap it, pan and all in aliminum foil and refrigerate overnight.
Serving Suggestions
Cut very thin pieces to obtain the stained glass effect.
