Make pastry by placing flour, butter, sugar, eggs and salt in a bowl. Roll out and press into base and sides. Keep some aside to weave stips across tart.
Spread jam/marmalade on base. In a bowl add vanlla, chopped apples and optional raisons and almonds. Add apple mix to pie.
Roll out remaining pastry and cut into 1.5cm wide stips. Weave across pie. Bake for 30 minutes.
