     Maple pecan muffins

Ingredients
3 cups all purpose flour
1 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
2 beaten eggs
1 1/2 cups milk
2/3 cup vegetable oil
2/3 cup pure maple syrup
1 cup chopped pecans
 
1 cup sifted powdered sugar
2 tablespoons maple syrup
2 teaspoons water
3 teaspoons baking powder

Instructions
Preheat oven to 400 degrees F. Grease or line twenty-four muffin cups and set aside.In a large mixing bowl,stir together flours,baking powder and soda,and salt.Make a well in the center of the dry ingredients and set aside. In a second mixing bowl, combine 2 beaten eggs,milk,vegetable oil,and maple syrup. Add egg mixture all at once to flour mixture and stir until batter is just moistened,it should remain lumpy.Fold in the pecans. Spoon batter into the muffin cups, filling each one about 2/3 full.Bake in preheated oven for 20 minutes or until done.Remove muffins from cups and place on a wire rack to cool. For the glaze,mix sifted powdered sugar,2 tablespoons maple syrup, and two teaspoons of water in a small bowl.Drizzle maple glaze over muffins.Makes 2 dozen
