Make Rub and rub all over the roast. Let Roast stand at room temperature (about 2 hours)

Heat oven to 450°. Place meat into oven for 15 minutes.
Lower temperature to 325°.
Roast for 25 minutes per pound.

|
Take meat out of oven. Cover with foil and let sit for 30 minutes.
