     Sauteed Carrots

Ingredients
1 lb carrots, peeled and grated (about 4 C)
2 Tbsp frozen unsweetened Apple Juice concentrate, thawed
1 Tbsp fresh Lemon Juice
1 tsp light tub Margarine
1 tsp Poppy Seeds
 

Instructions
In a nonstick skillet, combine carrots, apple juice, and lemon juice. Place over medium-high heat and sauté, stirring constantly, for about 3 minutes.
