     Mexican flatbread pizza

1 lb lean ground beef
1 pkg taco seasoning
1/2 c water
3 sheets spinach-flavored flatbread
2 t vegetable oil
1/2 c salsa
2 c (8 oz) shredded Mexican cheese blend
2 c (8 oz) shredded lettuce
1 c diced tomatoes
Salsa and sour cream (optional)

In medium skillet over medium-high heat, cook ground beef until no longer pink; drain any fat. Stir in taco seasoning and water. Cook until liquid is absorbed, about 2-3 minutes.
Preheat oven to 350F. Brush flatbread with oil; place on baking sheet. Bake until lightly browned, about 7-8 minutes. Spread 2-3 T salsa over each toasted bread. Sprinkle 1/4 c cheese over each. Top with meat and remaining cheese. Bake until cheese melts, about 4-5 minutes. Cut into serving size pieces. Top with lettuce, tomato, salsa, and sour cream.
