Preheat your oven to 400 degrees. Slice the top off the heads of your garlic. Make sure you don't completely slice it in half lengthwise; just cut them enough to expose each of the cloves. Place your heads of garlic on a large square of tin foil. Drizzle with olive oil and season with salt and pepper. Fold the tin foil up so the all of the garlic is covered and there is no way for the olive oil to be released. Place in your preheated oven. Let your garlic cook for 40-45 minutes. You can either check to see if they are finished by opening it up and seeing the garlic or by simply squeezing the garlic and making sure it's tender. After your garlic is cooked, remove from the oven and let rest 15-20 minutes, or until it has cooled. Add your 2 sticks of butter to a food processor.
