     Spanish Crockpot Chicken

1 Onion, Chopped
3 Cloves Garlic, Minced
1 Tsp Dried Oregano Leaves
1 Pound Spicy Italian Sausages Cut Into 1 InchPieces
2 Pounds Chicken Thighs Cut Into 1 inch Pieces
1 (28oz.) Can Diced Tomatoes, Undrained
1 Can Tomato Paste
1 Cup Chicken Broth
1 Red Bell Pepper, Chopped
1 Green Bell Pepper, Chopped
1 Can Artichoke Hearts, Drained
1 (4oz) Can Black Olives, Drained

In crockpot, mix all ingredients except for the bell peppers, artichoke hearts, and olives. Cover crockpot and cook on LOW setting for 6-8 hours until sausages and chickens are thoroughly cooked. Add bell peppers, artichoke hearts, and olives and cook 20 more minutes on HIGH setting. Serve with cooked noodles or rice.
