     Clam Chowder

Ingredients
2 cans baby clams (soup can size) or 3 smaller cans
1 cup onion
1 cup celery
2-3 cups potatoes
a few carrots for color
1/4 cup butter
1/4 cup flour
1 cup half and half (or 1 cup evaporated milk and 1/2 cup milk)
1 1/2 tsp salt
 
1 1/2 tsp sugar
1/2 tsp vinegar
pepper to taste

Instructions
Cut up vegetables into large pot. Drain clam juice over veggies. Add enough water to just cover vegetables. Simmer until done (about 20-30 min.)
Melt butter on stovetop. Add flour. Cook for approximately 3 minutes on medium heat. Add milk/cream (don't scald).
Add flour mixture to vegetables. Add salt, sugar, vinegar and pepper. Add clams. Enjoy!
Serving Suggestions
Could add bacon and cheese on top.
