3/4 lb. medium shrimp (uncooked, peeled and cleaned)
1 medium green onion with top
1 clove garlic
4 oz. uncooked fettuccine noodles
1 tbsp olive oil
2 tsp chopped parsley
2 tsp chopped basil
1 tbsp lemon juice
1/8 tsp salt
Grated Parmesan cheese, if desired
Instructions
Fill (3 qt.) saucepan half full with water.
Add 1/4 tsp salt if desired.
Cover and heat over high heat util the water is boiling rapidly. While water is heating, continue with the recipe.
Rinse shrimp with cool water. and pat dry with paper towels. If the shrimp have tails, remove tails with a knife. Peel green onion, and cut into 1/4-inch slices. Peel and finely chopped garlic.
Once the water is boiling, add fettuccine and stir to prevent sticking. Heat to boiling again. Boil uncovered 10-13 mins, stirring frequently, until tender.
Once the fettuccine has been cooking for about 5 mins, heat the oil in a (10-inch) skillet over medium heat for 1-2 mins. Cook the shrimp, onion, garlic, basil, parsley, lemon juice and salt in the oil for 2-3 mins, stirring frequently, until shrimp are pink and firm.
--DO NOT OVERCOOK THE SHRIMP--
Remove the skillet from the heat.
Drain fettuccine. Toss fettuccine and shrimp mixture together in the skillet. Sprinkle with cheese.
