     Sarah Moore's CheeseCake

Ingredients
FILLING-
3 eggs
4 8oz pkgs cream cheese, room temperature
4 8oz cartons sour cream
1 Cup sugar
2 tsps vanilla extract
CRUST-
1-3/4 Cups Graham Cracker Crumbs
 
1-1/2 tsps ground cinnamon
1/2 Cup butter, melted

Instructions
Mix crumbs, cinnamon and butter well and press into 9-inch springform pan. Mix eggs, cream cheese, sugar and vanilla until smooth. THEN add sour cream and mix well again. Pour onto crust and bake at 375 degrees on top shelp of oven for 1 hour (top is slightly brown when done).
VERY IMPORTANT- 1) Let cool completely to room temperature. 2) Then chill for 12 hours in refrigerator before serving. This will ensure creaminess.
NOTES- 1) There are many variations you can use for crust ingredients. Examples; crushed oreo cookies, crushed vanilla wafers, crushed ginger snaps. 2) There are also glazes you can prepare to drizzle when serving. Examples; strawberry glaze, apricot glaze or melted chocolate drizzled on each piece or entire cake.
