Break sausage into chunks. Heat oil in dutch oven.
Cook onion until tender. Add sausage, cook 5 - 8 min
until browned. Add red pepper, cook 5 min. Add
tomatoes, s & p. Simmer 20 - 25 min until thickened.
SAUCE- In sauce pan melt butter over med heat. Whisk
in flour, cook stirring for 2 min without browning.
Whisk in milk and boil. Reduce to med heat. Cook
stirring for 10 min until thickened. Stir in spices
and cheese.
Cook noodles. Arrange 1/4 on single layer greased 13
x 9' dish. Spread 1/2 meat sauce, 1/4 noodles, 1/2
sauce. Top with 1/4 noodles, remaining meet, noodles
and sauce.
Sprinkle with Parmesan. Bake at 375F for 40 - 45
min. Let stand 10 min. Serves 8.
