Heat the oven to 160c/325F/gas mark 3. Grease a baking tray. If using one with sides then use one the size of about a packet of shortbread with the two layers laid out side by side.

Mix flour and sugar in a bowl and rub in cubed cold butter. Use a pastry blender, your fingers or even a food processor to cut in the butter.The butter mixed into the flour/sugar mixture should look crumbly. If adding choc chips then add at this stage.

Dump the mixed shortbread pastry ingredients into a lightly greased pan.Use your hands to press the pastry into the pan. If not using a pan with sides then bring together to rectangle shape and then cut into buscuits. Mark with fork.

Bake for about 20-30 mins until pale and golden. While still warm, cut the shortbread into squares and cut diagonally to form triangles. Sprinkle top with sugar. Can look at below link to get pics of stages.
