     Cafe Rio Pork

Ingredients
3 lb pork roast
2 cups sugar (part white, part brown)
1 can Coke
1-2 cups salsa
 

Instructions
Slow cook pork roast in crockpot with a small amount of water. Cook until the meat shreds easily, about 3 hours. Remove meat from crockpot and drain liquid. Shred meat and put back in the crockpot. Add sugar, coke and salsa. Stir to incorporate. Slow cook for an additional 1-2 hours. Serve in tortillas or on a salad.
Serving Suggestions
Serve with Tomatillo Cilantro Dressing to make more authentically Cafe Rio.
