2 tubes Bob Evans sausage - 1 Italian & 1 Hot & Spicy
1 medium onion
2 bricks cream cheese
1 box manicotti shells
1 jar Italian sausage spaghetti sauce
4 cups mozzarella cheese
1 medium container small curd cottage cheese
Break up sausage and fry in a pan with chopped onion. When sausage is done (do not drain), remove from heat. Cut up cream cheese on top of sausage and set aside. Once cream cheese gets a little soft, mix well into sausage.
Make manicotti shells according to package. You will want the shells to be a little stiff so that you can stuff them. Spray your cake pan with nonstick cooking spray, and put a little spaghetti sauce in bottom of pan. Stuff shells with the sausage mix and place in pan. Pour half the mozzarella cheese of the top of the shells. Pour container of cottage cheese and spread out. Pour the remainder of the spaghetti sauce and spread. Put remainder of mozzarella cheese on top and pat down to make sure that all the cheese has sauce on it.
Bake at 350 degrees for 30 minutes or until you can see bubbles on the side.
