     Beef & Bean Enchiladas

Ingredients
1 Tbl oil
2 green peppers diced
1 lb lean ground hamburger
1 cup sliced scallions (about 4)
1/2 tsp salt
1 can (15.5 oz) black beans (rinsed,drained)
1 1/2 cups shredded pepper jack cheese
2 cans (10 oz ea.) mild enchilada sauce
1 cup mild chunky salsa
 
1/4 cup - 1 Tbs chopped cilantro
16 (5 1/2 inch) white corn tortillas
Sour cream

Instructions
Preheat over to 375 degrees. Coat 13x9 inch baking dish with cooking spray. In nonstick skillet heat oil over medium heat. Add peppers. Cook until softened (3 minutes). Add beef,3/4 cup scallions and salt. Cook until beef is browned. Remove from heat. Stir in beans,1 cup cheese, 1/2 cup sauce, 1/2 salsa and 1/4 cup cilantro.
Stack tortillias between two damp paper towels. Microwave on high in 30 second intervals until pliable.
Fill each tortilla with 1/4 cup beef mixture and roll up. Place in baking dish. Combine remaining sauce and salsa. Pur over tortillas. Sprinkle with remaining cheese. Cover and bake 20 minutes. Uncover and bake until bubbling. (8 minutes) Sprinkle with remaining scallions and cilantro. Serve with sour cream.
