For batter, in a mixing bowl combine 3/4 cup all-
purpose flour, 2/3 cup milk, 1 egg, 1 tbsp.
cooking oil, and 1/4 tsp. salt. Using a rotary
beater, beat just until smooth. In a large skillet
heat 1 inch cooking oil or melted shortening for
deep-fat frying to 365 degrees. Meanwhile, cut 4
medium-size mild yellow or white onions into 1/4-
inch slices; separate into rings. Using a fork,
dip onion rings into batter; drain off excess
batter. Fry onion rings, a few at a time, in a
single layer in hot oil 2 to 3 minutes or until
golden, stirring once or twice with a fork to
separate rings. Remove rings from oil; drain on
paper towels.
