splash white wine (extra if you are drinking while you cook)
1 sm. can diced tomatoes
olive oil
2-3 tbspns of capers
Instructions
add olive oil (a few tspns) to pan and heat (medium) and coat chicken with flour and salt & pepper
brown chicken on both sides and set aside in a separate dish...do not need to cook through since it will go back in the pan and finish cooking
add chopped onion, red pepper and garlic to the drippings in the pan (may need to add a little more oil along the way) and saute until soft. Add a splash of wine if you like after that is done --)
Add tomotoes, chicken stock and capers and then place the chicken back in on top. Cover and Simmer for at least 1/2 hour to cook chicken through....Enjoy!
