Butterfly chicken so one breast equals two thinned breasts. Rinse in cold water, pat dry. Pu toil in pan to coat bottom...heat (medium). Flour chicken and brown on both sides - set aside. don't cook all the way through.

Deglaze pan with wine first, bring to boil ( to cook off alcohol) and scrape pan drippings, then add stock. Bring to simmer.

|
Add mushrooms and chicken, cover and simmer on low for 45 minutes. Liquid reduces and gets thicker. During cooking, stir once in a while so that all gets covered in sauce.

If sauce gets too think - add more stock...
|
