     Quick Chicken Cacciatore

Ingredients
1 lb. skinless, boneless chicken breast halves
2 tablespoons olive oil
1/4 cup chopped onion
1/4 cup chopped green pepper
3 tablespoons red cooking wine
1 8oz. cup undranied, diced tomatoes
1 clove minced garlic
1 bay leaf
1 teaspoon Italian seasoning
 
salt and pepper to taste
2 teaspoons cold water
1 teaspoon cornstarch
spaghetti/ rice

Instructions
rinse, pound and pat dry chicken breast halves and set aside. Heat olive oil in medium skillet and add chopped onion and peppers and saute til tender. Add red cooking wine, undrained, diced tomatoes, minced garlic, bay leaf, and Italian seasoning to sauteed onions and peppers.
Place chicken on top of vegetable/herb mixture and bring to a boil. Add salt and pepper to taker and cover and simmer for about 15-20 mins or until chicken is no longer pink. Transfer cooked chicken to serving platter and keep warm.
Stir together cold water and cornstarch, add to skillet tomato mixture. Cook and stir tomato/ cornstarch mixture until thickened and bubbly. Cook and stir for 2 mins. Spoon finished sauce over reserved chicken. Serve over spaghetti or hot rice.
