For sauce, fry sliced onion and garlic in oil until onion is clear. Add
sweet basil. Puree tomatoes in blender and add.Simmer for one
hour, stirring frequently. Add sugar, salt and pepper. Stir
thoroughly and simmer 1/2 hour longer.
Beat eggs thoroughly, adding salt and pepper. Mix bread crumbs
and Parmesan cheese. Dip chicken in egg, then in bread-cheese
mixture. Fry in hot oil about 5 minutes on each side or until golden
brown.
Place brown cutlets on baking pan. Pour on layer of sauce. Then
cover sauce ith Mozzarella cheese.
Bake at 325 deg. for 15 minutes or until cheese is melted. Serve
very hot.
