Combine 5 cups of flour, 1 package instant yeast, 2 teaspoons
anise or fennel seeds, 1 tablespoon coarse ground pepper, and 1
teaspoon of salt in a large mixing bowl.
Make a well in the centre and add 2 ½ cups of warm water (not
too hot). Mix until a soft dough is formed. Place in a lightly
oiled bowl, cover with a clean tea towel, and let rise for 60
minutes in a warm place.
Preheat oven to 500°. Lightly knead dough and divide into 5 or 6
pieces. Bake one piece at a time on a preheated, inverted tray (I
use a preheated pizza stone). Shape each piece of dough into a
long, flat narrow oval about 12” long and 4” high. Roll it fairly
thin.
Brush each piece with melted butter and sprinkle with sesame
seeds. Bake one piece at a time, 6-8 minutes. The recipe says
to also broil it 1-2 minutes to brown the top, but I find I don’t
need to do that if I bake it in the upper half of the oven. Enjoy!
