For mint simple syrup, combine one cup water and one cup sugar in a small sauce pan. Boil without stirring until sugar dissolves totally. Pour over fresh mint sprigs in airtight container. Cover and put in refrigerator until completely cooled.

Combine chilled mint simple syrup, water and milk/cream in bowl of ice cream maker and turn on. Slowly add food coloring until you reach desired coloring.

When mixture reaches desired consistency, add in chocolate chips until well mixed in.
|
|
|
Freeze leftovers. Microwave leftovers briefly to soften before serving.
