2 T oil

3 tomatoes, cut into 8 wedges each

1 tsp sugar
|

1 20oz can (3 C) broth
|

1 20oz can chunke pineapple, drained
|

2 T white vinegar
|
|
2 T chop fresh mint or 1 tsp dried
|
|
1/4 C chop scallions
|
|
1/2 lb tofu chunked (optional)

Instructions |
|
|
IN large saucepan, heat oil over medium heat for 2 minutes. Add tomatoes and sugar. Cook 2 minutes, or until tomatoes are soft.
|

Add broth, pineapple, and tofu. Bring to a boil. Reduce heat to medium and simmer for minutes.
|
|
|
Add vinegar, mint, and scallions.
|
|
|
Serve over hot rice or in individual soup bowls with rice on side.
