1/4 cup hawaiian salt or sea salt crystals (or rock salt)
1 pineapple, diced
1 yellow tomato, diced
1/4 sweet onion, diced
1 lime, juiced
1 serrano, jalapeno, or anaheim chile, minced
2 tbsp. fresh cilantro, chopped
1 tbsp honey

Instructions
Place pork fat side up in a roastin pan or deep casserole dish.
Combine water and liquid smoke; pour over meat. Sprinkle with
salt. Cover and roast in oven at 400 degrees for 3 hours. Remove
from pan and shred. Serve with rice and Pineapple salsa
For Pineapple Salsa- combine pineapple, yellow tomato, onion, lime
juice, chile, cilantro, honey and salt in a bowl. Salsa can be made up
to 2 hours before serving.
