Melt butter in saucepan large enough to mix in. Stir in first measure of sugar. Separate the eggs. Add yolks to saucepan and mix until combined. Sift the flour and b.p. and mix. Spread into tin lined with baking paper.
Spread jam over the base. Whip egg whites until stiff, add sugar, then fold in coconut. Spread over the jam.
Bake at 180 degrees for 25-30 minutes. Cut into slices while still warm.
